Teen Volunteer Recipe: Lembu (Egg-Free Lemon Curd)

Ingredients:

3 lemons

2 cups of heavy whipping cream

1 cup of sugar

½ of lemon juice


Instructions:

Cut 3 lemons in half, and scoop the insides out. (There's no purpose for the lemon insides in this recipe so you could throw then away or blend them up and use them as a substitute for lemon zest in other recipes, such as cakes or lemon dough)


In a saucepan, add your heavy cream and sugar and put on low heat until it bubbles.

While it's still warm add your ½ cup of lemon juice and stir.

Fill the empty lemon shells with the mixture and let refrigerate for 3+ hours.
