Lemon Sugar Cookies


Lemon Sugar Cookies

Yield: 2 dozen  Prep Time: 10 minutes  Cook Time: 12 minutes 

 Additional Time: 1 hour  Total Time: 1 hour 22 minutes  Oven temp: 350°F




Ingredients

  • 2 sticks (1 cup) unsalted butter, room temperature

  • 1 & ½ cups granulated sugar

  • 3 tbsp lemon zest

  • 2 tbsp lemon juice

  • 1 large egg

  • 3 cups all purpose flour

  • 1 tsp baking soda

  • ¼ tsp salt

  • ¼ cup granulated sugar, for rolling cookies


Instructions

  1. In a mixing bowl, beat the butter, sugar, and lemon zest with an electric mixer for 1-2 minutes.

  2. Add the lemon juice and egg, beat again to combine.

  3. Gradually add in the flour, baking soda and salt, mixing by hand with spatula until combined.

  4. Cover the bowl with plastic wrap and refrigerate for 30-60 minutes.

  5. Remove the dough from the refrigerator. Preheat the oven to 350°F. Place ¼ cup of sugar on a plate for rolling the cookies.

  6. Use a cookie scoop to form balls, rolling each ball into the sugar. Place the cookies 2 inches apart on a silicone lined (or parchment paper) baking sheet. Bake for 11-13 minutes or until the edges of the cookies are a faint golden color.

  7. Allow the cookies to cool on the baking sheet for 5 minutes, then move to a cooling rack to cool completely.
